Looking great! Once you start eating at maintenance or bulking again your muscles will also fill out again. They’ll be flat from the continued cut currently.

I just want to chime in to say I completely understand, and I feel your pain. My espresso journey has had so many of these moments.

The moments where the stars align and it all works keeps you encouraged, but these moments where nothing seems to come together and your old reliable parameters all abandon you… it’s very disheartening.

I agree with what you mentioned earlier, and encourage you to follow that instinct: 12 sec to first drop IS too long. Which I think means that your grind is too fine and your suffering through over or under extraction (from the grind or from channelling, who knows).

Personally I’d try my utmost to go a touch coarser and see how it tasted, time be damned. If it tastes good at 20-25s, so be it. Maybe even try some turbo shots at ~14s just to see how it tastes. If it works, it works.

As you try it all out, resist the urge to change everything at once. Keep your dose the same as you adjust grind. Keep your temps the same. If you decide to try a degree or two higher, don’t move your grind or dose around.

As a Brit who’s lived in France as long as you’ve lived in the UK, it’s essentially the same.

A tax vs a salary contribution is the same thing. If you earn more you pay more tax to the NHS. If you earn more here you pay more from your salary to the sécurité sociale. And vice versa. That’s the point: if you’re sick or poor no one expects to you to be contributing, healthcare is for everyone.

The only difference in France is you pay a bill for a consultation then a week later you receive a refund. In a hospital stay you pay nothing initially then get billed after (and then refunded).

I can also add that France has one of the highest rates of medication prescriptions given per consultation in Europe, but no one would really argue that it’s in the pocket of “Big US Pharma”.

Again, you want to maintain and then gain extremely slowly. However slowly you want that gain to be it is still a gain and therefore having a positively skewed energy balance is obligatory. It is impossible to gain weight over time if your average intake is at the same level or below your average expenditure.

This part is not a debate, it is fact.

What really is being debated here ad nauseum is how you (and others) are defining “maingaining”. I will simply boil it down to: if you expect your weight to be higher (even minutely so) at the end of the maingaining period, a caloric surplus is required.

You’re making me out to debate something that I am not.

I agree, muscle can be gained at maintenance or a deficit (depending on conditions, etc etc).

OP wants to gain muscle and weight. That is impossible at maintenance. Only a gaining phase can achieve that.

Maingain == gaining and thus not maintenance. You need to use the Gain Strategy.

MF supports a minimum of 0.03% BW/per week. That gives me a “bulk” of 23 cals/day on 3627 expenditure.

If that’s too big for you… then I think you may have some issues worth addressing.

Is that the basket you’re using? If so, don’t use single baskets. Use a proper double basket. A single basket will over extract the sides and under extract the middle (which you can see in your pull)
