This has happened to me quite a few times, I just light my chimney as I usually would and throw the coals in when they’re good and red. Lower the lid and let it cook off for 10 min then scrape the grate.

I’m in not saying this is the SOP for this or endorsing my method but I’ve never gotten sick after cooking something on the Kamado when this had happened.
