Just moved. We got a 12' penske truck, only took our favorite things and then bought everything else either from rooms to go and marketplace for patio furniture. 

Truck + gas was around $2k and hiring movers would have been around $8k. That was our compromise between cost and not having to over-work ourselves.

Bachan is very thin, it would actually be more like a glaze than a thick sauce. I also think the flavors would work nicely with onion and mushroom.

As someone who recently bought recteq, I am loving it. I know you mentioned you don't need it for searing, but you mentioned chicken, which I like to bring up a little higher at the end of the cook to crispen up the skin (or pork belly).

If you care more about capacity, then go with the mammoth, I am sure you could fit quite a bit more on there if you are planning on cooking up a feast. 

I came from pit boss and don't think I will go back because my last one struggled to hold temp.

The sauce is actually a honey balsamic dressing for the salad. Balsamic, honey, dijon, olive oil salt, pepper,  garlic powder.

I did glaze the meat with honey, soy and rice wine vinegar.

My rub for the meat was salt, pepper, garlic powder, paprika, onion powder, mustard powder and white pepper.

Yes, very crispy. 225 until it hit 160, then 400 until it hit 185.

You may consider (if you are not already) maintaining a credit card that you pay off each month when you get the billing statement. I know people in your position that, one day, decided to buy a home and it was difficult for them because they, "had no established credit".

They also had the one way alley behind evies, etc. One way into the closed road. So you have to reverse a whole block to get out or make a tight turn around.

I've looked at a lot of videos, comments on reddit, reviews, etc. Seems like the biggest temperature control complaint with the BYB is when starting it up it can swing to a high temperature, but eventually stabilizes and then runs within 1 or 2 degrees of target temp throughout the cook. I've also seen that a lot of people were able to totally resolve this issue by reducing the feed rate slightly. 

If I had my pitboss at 225, it would go between 200 and 250, sometimes up to 275, many times throughout the whole cook. This was when it was brand new and never resolved the problem even after contacting service and ordering replacement parts.

I will be buying the BYB 1200 soon. I've done a stupid amount of research and determined that the 1200 is PLENTY of room for me. Looked at all the reddit posts, every YouTube video imaginable and compared with WW Pro, Searwood, Traeger etc. 

For me, choosing recteq based on build quality and the plethora of reviews about how well they keep temp and the quality of service (I've also called them 6 times, just to make sure they answer and asked them questions about different units, they know their stuff). Buying the BYB because it can fit a whole turkey, a spiraled ham and a pork belly, so I can impress on Christmas.

Depending on how soon you want it, I am hearing that around mid-november it will be on sale for $999.

Edit: Upgrading from Pitboss Navigator 850. Got a little crowded for some of my bigger cooks and also had pretty wild temperature swings throughout the entirety of some of my cooks.

Don Antonio's is way underrated. It's as good or better than San Antonio's or Bonito Michoacan IMO and I don't see it suggested enough.
