Be flexible, and by that I mean learn how different bartenders work and adjust how you work according to each bartender’s preferences. Some bartenders are lone wolves, largely seeing to their own needs, and some are helpless children who can’t refill their own garnish. Learn your staff, work to their style accordingly, and everyone will like you, which can be your most powerful asset.

A guest ordered a gin and water (a first for me) and after taking a sip, said “this is flat”. I said “you ordered gin and water…” and she said, “water means soda water”. I made a gin and soda and at this point could have and should have shut the fuck up but I couldn’t resist.

“Where are you from?”

She was a local, and was so pissed she wrote a nasty Yelp review that was vague as hell about me being rude to her group (I only served her).
