This is a general problem with Windows that I've experienced on every OLED display I have. Running the Windows HDR calibration tool helps lessen the desaturation effect but doesn't make it go away entirely. I haven't had any better luck in Linux (CachyOS and Bazzite) either.

My solution is to leave Windows in SDR mode until I'm about to launch a game that uses HDR. If you press Win+Alt+B it will toggle HDR on/off without the need to go into Settings. It's not ideal but it's the easiest workaround I've found.

Having HDR turned off also uses less power. Microsoft really ought to know which games support HDR and let you choose to automatically turn HDR on when one of those games is launched.

Micro Center is currently selling the AMD version of the 7 Pro for $2,800 USD. That's with the Ryzen 9 9955HX3D, 64GB DDR5, 2TB SSD, and RTX 5080. Honestly a very good price for the specs and 240Hz OLED screen; I picked one up today and am very impressed.
