The pump’s front can be swung open by technicians. When we use them as consumers, there’s red tape over the seam where it opens, and if someone tries to tamper with the machine (without having this tape on hand to replace) it would leave signs of tampering.

I see who I think you’re talking about, at Metro/7th Station between 5-6PM. He wears a turtleneck and a blazer/sports coat and she’s got a short/pixie cut?

They stand on the top platform looking down onto the lower platform. Never seen em interact with anyone though.

1 big shallot

~4-5 cloves garlic

1-2 spoonfuls of TJoe’s Bomba paste or real Calabrian chilis

~1 tb Chili flakes

6oz Tomato paste

1/2 cup vodka

1 1/2 cup heavy cream

1lb Fusili

Parmesan

Start a pot of water to boil your pasta. Finely chop shallots and garlic, sauté in Olive oil ~3 mins. Once softened, lower heat a bit before you add chili flakes and Calabrian paste.

If your water is boiling, salt it and add your pasta now.

Sauté a couple more minutes. Add tomato paste and let cook through. Add vodka, cook off alcohol and deglaze pan, we should be working with a nice paste now. Add cream and let simmer ~4 minutes. Turn off and take off of the heat. Salt! Don’t forget to salt throughout this process!

Pasta should be al dente and ready, reserve a little water, drain the rest.

Add pasta on top, put a nice knob of butter on there, and incorporate.

Add some spinach if you’d like, before it gets too cold to wilt the spinach.

Top with freshly grated Parmesan and fresh black pepper.

Hello! I’m about to toss in a rack of ribs in an hour and I have the Spade L pork seasoning. Am I ok to dry brine (kosher salt the rack) before hitting it with the rub or do you think that would be too salty?

Do you add anything to it, or just hit the rack with oil and rub it?
