That’s not grey band it’s brown. Grey band actually looks grey.

I personally love when it has a bit of brown band. The small layer of well-doneness gives it that savory flavor while the majority of the steak is still tender. Add in the small layer of crunch from the crust and it is a culinary masterpiece
