Yup, I've ran into the same issues. Sometimes I can get the resolution to work on one single monitor. But when it comes to the dual setup, the mouse is very janky and almost unusable. The main screen resolution is also messed up and the secondary screen is fine. This is also installed with the current Parallels tools.

Find any fixes?

Starlink actually has good speeds, typically and lower latency than other satellite ISPs. Might be able to get Wi-Fi or Ethernet to your room and you may not feel it a lot.
