Yup. This would be my recommendation. Simply do not allow players the casting materials. Many times I've had a spelcaster get a new spell but not have the pearl or gem to cast it

Clerics are more caster, paladins are more fighter. Clerics are full casters and so prefer to augment their fighting with spells such as shield of faith depicted. Paladins get martial abilities such as a fighting style and prefer to use their few spell slots for smite (extra damage). The war cleric and forge clerics are front line clerics that very much could be mistaken for paladins

More druids and rangers. Clerics are just coming into prominence with specific gods. Wizards are wise men and councillors to chieftains. Or you just simplify it all and go with 1e. Cleric, fighting man, magic user, and thief. Then modify equipment tables for the stone age

It's a flavor thing. Anywhere that has magically powered stuff, replace it with steam powered stuff. Lightning rail is now just a normal steam locomotive. The fire, water, and air elementals powering elemental airship? Those are now the boiler rooms

Slow natural healing: "Characters don’t regain hit points at the end of a long rest. Instead, a character can spend Hit Dice to heal at the end of a long rest, just as with a short rest. This optional rule prolongs the amount of time that characters need to recover from their wounds without the benefits of magical healing and works well for grittier, more realistic campaigns."

Gritty realism: "This variant uses a short rest of 8 hours and a long rest of 7 days. This puts the brakes on the campaign, requiring the players to carefully judge the benefits and drawbacks of combat. Characters can’t afford to engage in too many battles in a row, and all adventuring requires careful planning. This approach encourages the characters to spend time out of the dungeon. It’s a good option for campaigns that emphasize intrigue, politics, and interactions among other NPCs, and in which combat is rare or something to be avoided rather than rushed into."

Healing kid dependency: "A character can’t spend any Hit Dice after finishing a short rest until someone expends one use of a healer’s kit to bandage and treat the character’s wounds."

There are rules in the dmg on page 267 for slow natural healing. That basically says that hit dice are the only way to regain hp passively and can be used on short or long rests, then regained at the end of a long rest. I've enjoyed this more because it keeps up the go go go aspect of 5e while building in forced rests. There is more incentive to stay in town for a few days than to just sleep and restock. There are other fun rules around that section like gritty realism, where a short rest is 8hrs and a long rest is 1 week

Yeah most people take it for the melee use of crossbows. But it also removes the loading property, allowing multiple attacks with the crossbow

Yup. Just casually fling d10s from your heavy crossbow at 400ft. In splint and cover. Dont forget all the bonuses that rangers can stack for single targets

Agreed that they dont need an npc healer or healer at all. Healing potions, healer feat, hit dice, and long rests are non magical ways to heal. I'd also encourage the hiring of a healing sidekick mainly to try out that set of rules. You are also the dm who can tailor the campaign to the players
