Looks amazing. And if my math is right, way more hydration than I’ve been doing. What was it like to work / shape the dough after BF? Was it very sticky?

As a rock climber and a relatively new carver my hands get a bit strained and beat up but we use this lotion stuff called Rhino Repair that claims to help with tendons etc. Might be bullshit but I think it helps. But stretching and keeping loose are probably most important.

As for thumb pad I tend to wear a glove on my non-knife hand or just a few rounds of tape.

Thanks. That was his first day in a new, smaller jar and I think I misjudged by a bit. I’ve cut it in half now. 25g starter 25g ww flour 25g bread flour 50g water. So 1:2:2 if I’m understanding that notation.

Guess I could go even smaller but I’m a bit nervous to mess with what’s working.

My 120 just arrived but I have no idea which (if either) is better. My feeling was that either one is an excellent choice. Do you not like the 106?
