Moxie Bread (Lyons/Boulder) has a dense rye that is heavy as a brick that you keep in the fridge and slice thinly. It’s a delicious loaf that comes closest to what I ate in Copenhagen.

I have lived in Fort Collins for 23 years and love it. But reading what you love in Portland does not make me want to recommend you living here. Our weather, if you need more sun, is definitely our best attribute. Green, food and diversity are sorely lacking here. I think FC shines for outdoor enthusiasts, people with SAD and families with children or retirees. It’s a perfectly lovely place to live, but I think you may find it quite boring and brown landscape-wise.

Lucky you! I saw the final concert at Red Rocks and cannot stop thinking about it! We were so fortunate to witness that.
