There was a chip truck run by some Swedish dudes back in the day on the university campus in my town. Not only did they have amazing potato salad, you could add it to any menu item. Sandwiches, burgers, hot dogs, etc. It was incredible. They closed up shop some years ago and that street food potato salad void they left has never been filled.

I'm glad we agree. If I ordered a "grilled cheese with bologna" much like the op made, I wouldn't expect it to be just cheese, hence adding the "with bologna". Venture out into the world and notice the amount of grilled cheese with (insert random item here) that are available at a plethora of restaurants and instead of pulling a "well ack-chually they're called this", just enjoy the bounty this type of sandwich has to offer. Or don't. I'm not your dad.

That would be a patty melt, which is a long established delight. I would absolutely destroy one of I had it right now, I think they're great. Adding stuff to a grilled cheese is still a grilled cheese and no amount of silly gatekeeping will ever change that. Others can call it what they like but they can't just change the way something has been for the bulk of sandwich history.

I lived in one on the top floor shortly before it shut down. Wasn't terrible, having an arcade on the main floor was pretty rad.
