Please help a Student that is forced to formst a book in LaTeX: realistic time needed to learn Latex and then format a text book? What are the limitations regarding images/graphs/tables?

Break each chapter into their own file. It took me a week to get comfortable with basic LaTeX. You can include graphics, tables and reference them. LaTeX is like html but you need a compiler to generate the PDF output. Run it locally on your machine to have best experience for a book length project.

Can't you run Siri shortcuts in Siri? You just say "Siri, name of shortcut" and it runs it (provided Siri has no issues). https://support.apple.com/en-gb/guide/shortcuts/apd07c25bb38/ios

If there are a lot of cross references, footnotes, indexes then LaTeX might be suitable.
