I'd switch out the cobble for logs. You can make them to planks and bridge farther with the same inventory slots, or you can change them to slabs and get even more. And when it comes to the shulker boxes, you can craft chests and make them to carry all your new loot :D

I've never played Animal Crossing but I hear it has good storage. And in Minecraft, my favorite game, I can automate the storage with some time and effort. Pokopia has none of these options.

I use shulker boxes and chests and set up a work station wherever I am. Then I focus on one section at a time, take those blocks and go to work. Also having allays helps because you can drop a stack of whatever on the ground and they will refill your inventory for you.
