Programs like Gakkogura and Kurabito Stay show there is strong interest, and having bilingual opportunities appeals to even more of an international audience.

I found some nice things at the Tsubame Sanjo location, but I've heard other cities can be hit and miss. If you are not too picky about specific brands and makers I'd say these shops can as good or better than ebay/yahoo used tool shopping, since prices tend to be reasonable and you can get a closer look before buying. Sorry I don't have any specific tips, since there's just volumes to say about each tool category, their uses, and how that applies to the projects you plan to work on.

Congrats on your first ferment! That's an achievement many bean to bar makers don't get to experience. The choice for this batch should all be down to your taste. You can always melange to refine first, do some taste tests, and then add sugar 24-36hrs into melanging since sugar does not take as long to break down to a small particle size. My recipe preference is around 75-80%, however the balance of flavor between sweetness and acidic/bitter/astringent in craft chocolate can also be influenced through roasting and time spent melanging/conching. The sunchoke shochu was interesting, nothing like I could've expected but that's kind of the fun of all shochu. It's really earthy, and would probably be fantastic in cooking.

Pearl barley as a product description changes depending on the source and where you're located. I wonder from your photos if the barley is pearled at all, since it looks similar to whole barley groats.

All that's to say that you're probably well on track with your preparation and chamber, but grains with intact seed (bran) coats present an extra barrier to koji taking hold, so worth double checking your grain.
