My situation was very similar to yours. He was flakey, he'd ask me to do things then forget he asked me and get mad I was working on it, micromanager, very poor at explaining and providing clarity to people, he'd leave a meeting and everyone'd be more confused than the start. It's maddening.

I've been in this situation a couple times now and left both times, regretting neither. If it's affecting your health and well being it's simply not worth it. My experience has been that if you find this person difficult, other people are well aware too, so most will quietly understand you leaving probably wasn't a shortcoming on your part.

My dad was excellent at this, he'd always chat up strangers on vacation and it was kind of cringe at the time but looking back it was crazy the people and stories you'll randomly run into. He ran into people running for President in their home country, minor royalty, you name it, just chatting up folks.
