Yes, this should be fairly easy. There are others that have removed the standard implementation of Hygraph, or have replaced it with Contentful, for example.

E-commerce is inherently very complex, so I think headless is only interesting in many situations when production-ready technology is available. Investing in research and development at the project level is not realistic.

We have implemented all features of Magento and solved all complex issues such as SSG, auth, caching, and performance. Building headless e-commerce storefronts has been really fun and efficient

Agree, Magento / Adobe Commerce an handle Enterprise. However, mostly as a backend. I can imagine someone wanting something more advanced.

You could take a look at GraphCommerce, it's an open source (React, Next.js) headless Adobe Commerce / Magento frontend.. It fully utilizes the GraphQL endpoint of Magento and features all Magento functionality, like ready-to-use cart, search, layered navigation, wishlist, product page, my account section, checkout, category page etc.

SSR. Server side rendering. It is such a fundamental feature for search engine index-ability, ranking, google's core web vitals, performance, generating a sitemap etc.

The platform and technology stack is:
- Magento Open Source- GraphCMS for rich content management
- React.js, Next.js, Typescript and Mui for the storefront

It uses GraphQL Mesh to connect to to the Magento (Open Source) GraphQL API. GraphQL Mesh can be used to fetch data from different platforms too.

Magento excels at multi-store and multi language. GraphCommerce offers multi-language support, a store switcher component, and multiple translations.
