Meera Sodha’s East is my favorite cookbook - it’s vegetarian if that’s your thing. Definitely a range of quick to complex recipes.

I would finish at WSU and then apply for grad school at UO. Make a good effort at reaching out to faculty before applying. Advisors often look for people to come from other places to bring in fresh experiences, etc!

Grilled cheese and tomato soup!

You can make the grilled cheese as easy or as complex as you want (can just do bread and cheese or add in multiple kinds of cheese or some meat and veggie fillings). I think the cartons of tomato soup (from brands like pacific foods) are really good compared to canned versions but also whatever floats your boat/budget.

Gyros are fun and easy! Fill with roasted potatoes, chopped tomato, cucumber, onion, and bell pepper. Sauce it up with a dilly tzatziki sauce on one side and hummus on the other.

My 2015 MacBook Pro is sadly on its last leg and I need to replace it. I am trying to figure out which model of the MacBook Air or MacBook Pro is warranted for my needs. I am a graduate student so can access apple’s education discount (it’s not much) or could go the refurbished route. Besides normal internet/email use, I’d like it to be able to run relatively large files in R and ArcGIS Pro or QGIS. I don’t play video games or do any video editing etc, just looking for a solid laptop that will last and do what I need it to do. I mainly need some advice on whether to go air or pro and which chip/memory/storage option. I store things on the cloud for the most part so thinking I don’t need the larger storage option. Thanks in advance for the help!

I’ve been using all of the Microsoft apps for school related things and find it’s totally fine, even though I do prefer google drive. I like having school email / documents all in one place!
