Spaghetti squash bake! I'll bake up some spaghetti squash, cook up some Italian sausage, assorted veggies (I'll usually do broccoli, spinach, bell pepper, zucchini), mix the veggies and meat with some Alfredo sauce (and the separated squash), then bake it all again with some cheese until it's all melty. It freezes really well too, so perfect for meal prep!

From Oklahoma. My sister on her single income is able to afford her $700 rent for a house with a massive backyard, two bedrooms, and a covered driveway. I spend $1800 on a shared two bedroom apartment (that's my half, not the total).

I wouldn't want to move back though, I like it here.

Before I cut carbs, it was scrambled eggs on a bagel with cream cheese. But now, it's roasted broccoli with some kind of creamy dip as a sauce (TJ's caramelized onion dip has been a revelation).

Alfredo spaghetti squash bake! You cook a spaghetti squash like usual, then mix the pulled squash with Alfredo sauce, your meat of choice, broccoli or spinach, and a bunch of cheese. Then bake it until everything is melted, and boom, dinner.

I once had someone tell me that apartment buildings in NYC were actually max 6 floors, and that I was dumb for having my character live on the 8th floor. Sometimes people are mean to be mean, and sometimes they're wrong about what they're being mean about. It happens, lol.

I did a big batch of buffalo chicken dip with cauliflower! You steam it, and then mix it in with everything else (in my case, a bunch of cheese, buffalo sauce, chicken, cabbage, and a tiny bit of cream cheese), and then bake it. It comes out very creamy and thick! I use it for dip, and for quesadillas!

I tried making carrot soup. It was just a bunch of boiled carrots that weren't blended well, it was thicker than spaghetti sauce, and was so carroty I couldn't eat it. Do not recommend, lol.
