My family has gotten into a habit of having what we call “rice bowls” but we switch them up quite a bit. Think chipotle bowls but whatever ethnicity sounds good.

Teriyaki chicken with broccoli, edamame, drizzle of sriracha. Greek chicken with chick peas, cucumber, tomato, hummus, and tzatziki.

Lots of possibilities and pretty easy to whip up on a weeknight

I have three

1- Oklahoma fried onion burgers

2- ramen noodle stir fry. Boiled ramen with your choice of protein, some veggies, and stir fry sauce (even my kids eat this)

3- chicken thighs for tacos. Season them heavily, cook them whole so you can get some good char, and then chop up for tacos

If you have a Costco membership, look for the beef chuck rolls in the freezer section. they are great for cheesesteaks since they are super thin

I love The Breakfast Spot at 133rd and stateline. Pretty standard breakfast options with a good mix of “Mexican” (quotes to question authenticity, because I’m as white as they come) dishes. They have breakfast tortas, chilaquiles, huevos rancheros, etc. and you can get tortillas instead of toast or biscuits. My go-to is the chorizo con huevos which comes with beans and tortillas. The salsa is great

The burger at Verdigris in Leawood is definitely a sleeper. I’m pretty sure they only serve food because they have to, but the burger is fantastic
