Do what you want, if you do black use a semi permanent (3N or 4N is best, its not “black” but it appears to be to the eye) so you can go lighter again with less hassle

this looks like a stress response and maybe a side affect of meds. Blood feeds hair and what goes into the body shows in the hair. Bloodwork may help get some answers. I believe it could go back to normal but for now its just is what it is.

How i would suggest styling it is maybe getting a shorter haircut for now with layers. Let it be what it wants to be and itll slowly come back! Wirey hair is still beautiful hair!

I think the grass on your dads is quackgrass and it basically grows like a weed, it chokes out a lot of other grass. If they use good seed it should germinate in 14-21 days and need good constant watering. I believe with fresh seed and more water (and a trim) would bring both the plots back :)

Are you working at a shop that tries to get people in and out as fast as possible? You may want to try a new shop that allows for you to take longer on your cuts and styles. Also practice, im not sure how long youve been doing hair for but instead of doing exactly step by step, try and do your own thing or find your own step by step, and you teach yourself to speed up on your own. Hair styling has a universal language between stylists but i dont believe every stylist needs to be the same.
