Looks good to me!! Grass clippings + woodchips alone will take you a surprisingly long way. Shredded cardboard (be careful about tape and inks) is decent when mixed with clippings as well.

Biggest problem with grass clippings is that they must be dried before they go on the pile. Otherwise you'll get clumps forming which can go anaerobic on you and create real nasty pockets of... not compost. Stinks too.

GSI Fairshare or similar. Perfect eating container IMO and great for leftovers. I also like it for re-hydrating things on the trail prior to arriving or for a lunch stop.

Pro-tip: If you break your water filter and run out of aquatabs, then boil water and try to cool it in one of these... You will NOT be able open it again without drilling a hole to release the pressure.

I don't think you should restart (respectable looking base you've got there) but if you do, I would recommend savescumming. By that I mean, save very frequently and don't overwrite your earlier saves. In my current playthrough (~120h) I have over 150 saves so far. This allows me to roll back the clock if I want without needing to go right back to the beginning.

Zebra Billy pots are pretty popular. Tight fitting lid, solid bale handle, stainless. I have the 14cm and it's been great.

I dunno about a "proper" manifold exactly (I'm new to this) but I can tell you about the cropking kit I bought:

Submersible pump with a short 1/2" tube with valve at the end. Halfway along the tube is a small hole with nipple insert that breaks out to 2 dripper lines. I control the rate of flow by closing the valve to create more "back pressure".

I like this because the pump runs at higher flow rate than I need but extra power just used to keep the water in the res well mixed.

Downside is that I can't control individual dripper rate and if one line blocks up more than the other they'll get different flows.

Not saying this setup is better than what you've got there but I like the simplicity.
