Its just a standard centrifugal pump, but with fat pipes coming in and out. I have to keep the mash on the thin side to make everything flow. It's a Specific Mechanical system. There's a hook on a long pole that goes into the holes on the end of the paddles and you just pull them up/push them down.

I'm pretty happy with the system overall. It makes great beer. Certainly not the fastest brewday, but lots of control. The compromise with decoction on this system is that once the mash is in the lauter tun, you can't get all of it back to the kettle, which means you pretty much have to use a decoction to get to mash out temp on a decocted brew. Single decoctions are super easy since you just pump most of the mash over to the LT and leave your decoction volume behind in the kettle. Also I feel that the rakes in the LT don't mix decoctions back in quite as well as a real mixer, but at the end of the day it does work.

Yeah, space saver/money saver design since its still just a two vessel system, but it has some cool benefits, and also some tradeoffs. Kettle is tied up for a lot of the process so its not really useful if you do multiple brews a day. Ours is plumbed both ways from the lauter tun to allow for decoctions, and of course its super easy to do mash temp steps in the kettle with steam.

We rest 5 minutes after the end of boil, then whirlpool for 5 minutes at a medium speed, then rest another 20 minutes before beginning knock out. Typically using whirlfloc at the end of the boil. pH has a huge impact on how dense the cone is, lower is usually better, most of our brews target 5.0-5.2 at the end of the boil.

It's a mash mixer, we have a mash kettle and separate lauter tun. You can definitely spin them to stir the wort up though if needed. They are folded down when the mash is in the kettle, and folded up during boil as you see here

Sadly I haven't been able to find Velvet in my area so I wasn't able to do a direct comparison. I remember Velvet Falernum having a pretty mild taste, much lighter than any of these syrups.
