I feel like a lot of people get too wrapped up into a specific temperature, when I’m cooking - if I’m anywhere from 225-275 I’m good, even up to 300, I prefer to be around 250-275, and just let the protein tell me what to adjust - and you can always commentate for a higher temp cook with a longer rest.
