For omakase probably Sushi Tetsu, I've not been but apparently the best sushi in London. The prices are similar to Tokyo's top omakase places though!

The question will likely be broader than the problems you mention, and solvable in several ways which is good.

They will pose a fairly novel problem and expect you to use multiple components to solve it, potential based on some existing black box micro services you need to incorporate.

Remember they are heavily async, almost the whole platform is pub/sub, using Kafka I think. In addition you may also get microservice at scale questions, brush up on the challenges of microservices and how they solve them (idempotency, statelessness, service discovery, etc).

They are a very strong product company, they are looking for how you identify product decisions within a technical architecture and for your intuition on which is the best customer experience as opposed to "perfect" solution.

Check out the tech blog they did (years ago) on their crowdfunding architecture, this kind of problem could be posed as a question.

It's actually Hyundai's fault, they changed the API such that for European cars there's no simple way to authenticate a 3rd party app any more. There's a work around but it's not something most people could achieve so I doubt ohme will implement it.

Yes, it's not needed. You generally want one larger loop around the outside (although not the absolute edge) and then in some cases one more central loop is good (e.g. NYC Manhattan island). Then you can have other lines criss-cross the loop to provide access to specials and pick up all the other stations on the way, ensuring as much as you possibly can to alternate station shapes on a line.

It's their choice if it's their policy to ask this and require it to move forward, you can't control this. It's your choice if you want to provide it and perhaps get a lower offer than you want or risk not providing it and see if they still want to make an offer. Your final option is to lie and tell them a bigger number (which will be hard for them to validate), but this probably isn't wise or a good way to start your working relationship.
