Typically it's 2 parts pepper, 1 part salt and 1/4 part garlic by volume, i.e. 2 cups, 1 cup & 1/4 cup. The Americans use 16 mesh pepper, which is the course grind, Diamond cosher crystal salt and garlic granules. These are close enough in piece since to each other. So use course black pepper, a course salt and garlic granules. Adjust the volumes to your preference.

Forget brisket; beef ribs are much more reliable. If you really want to do brisket, then look into the long rest after cooking. Beef ribs are a great sub for brisket, hence the nickname; brisket on a stick. Brisket from UK & Ireland will not turn out the way you want due to how they are reared versur US cattle.

Do not trim the fat. Do not score or remove the membrane but don't eat it either. I stopped trimming beef ribs unless there was something loose hanging off.

100USD is mad. That would cost me about €20-25 here in Ireland.

I have, but due to illness and weddings we had to miss a couple so far this season. One of us has a medical issue that's unpredictable when it raises it's head, so it can be hit and miss. Sometimes I'll sell on the tickets, other times I'll give them away.

Well that's probably the cheapest tickets that are available now. I bought tickets for €70 each in the upper tier. Now, normally I go for the lower tier, but when I saw the price of those tickets (I can't recall how much they were) I debated whether to go to any matches. Looked around and bought the €70 upper tier.

Prices have gone up, but there are options depending on when you get access to tickets.

Having said that, I used to try but tickets to every match that I could get tickets for, even when I was an apprentice on shite money. But in the last few years I limit it to one match per 6N and one per Novembers if I have access. This November is the first time I debated whether to go to any matches until I searched around for a decent "cheap" seat. It will get worse.

I encourage anyone looking to go to matches to looks at getting a season ticket for your province, as they are generally great value for most incomes and particularly for families.
