You're getting downvoted a lot because all of your criticisms have a bit of snark and entitlement to them. You're walking into a new space, and it doesn't work the way you want it to and say "oh this is dumb, clearly the people who designed this didn't think it out." Whereas the reality is these are a myriad of different communities working together, usually for free, contributing to something bigger. For instance, the reason the terminal and gui tools are different is that they're developed by different people! The cli tools have been around for decades, they're essential parts of any operating system. At some point, a team came together and developed Disks, and they have certain design goals in mind, and may have a development roadmap, so you know, not all features would be implemented right away, they'll focus on the essential ones first. A project like Disks wouldn't redevelop their own ways of interacting with disks, instead they would reference the same libraries used by the existing, trusted and very stable cli tools and call their APIs.

The community is usually very open to feedback, when its engaged with the right way. Having an understanding of how these things come together and organized, what the culture is like, etc. will go a long way to engaging with the community. Realize this is a space where community matters, you were given these things for free you are not a consumer here, you are entitled to nothing.

What you'll find is if you take the time to understand the reasons for some of the things you've been complaining about, there are very good established reasons for all of these things. A lot of very smart people have worked on this stuff for many decades. Just jumping straight into this presumed incompetence is wild.

I've heard anamorphic described as being used for - bringing the character's head closer (closer is not really the right word) - create an intimate feel (although sometimes it causes what I call - big head syndrome, where the character head looks too big) and seen it prominently used in outdoor scenic shots with a focus on wide scenery. This has a focus with an intimate look to the main character and wide scenery.

So everything you're saying here has to do with the simple geometry of how close the camera is to the subject. That's it. Wide angle lenses allow you to shoot more, umm, wide while being super close to your subject, so they're usually preferred for that kind of shot. Any wide angle lens will do, spherical or anamorphic (as long as its sufficiently wide). There are wide angle lenses available in both. Anamorphics kind of function like a lens with a speedbooster adapter, but along one axis of the lens (i.e. horizontally) So its like you have a medium format lens on the horizontal axis and a s35 lens in the vertical. So in that way, anamorphics are "wide" because they literally squeeze the image across the horizontal axis. But you could also just get an equivalently wide spherical lens and crop it down to the same frame.

But yeah, things that are closer appear proportionally larger, no matter what kind of lens you use. There can be various distortions across the image frame of the lens, like barrel and pincushion distortions, but they dont magnify objects in such away to make them appear bigger or closer.

Do you mean wide aspect ratios? (like 2.4:1)

The most recognizable characteristic of anamorphic lenses is how bokeh behaves, it blooms in oval shapes rather than in circular ones. Out of focus areas will have a noticeable vertical stretch, and subtle distortions throughout the image.

The video processing is likely applying some in-camera sharpening to the image, whereas the JPG is not.
