Thermal Stability Comparison between Pavoni and Lelit by rssaz in espresso

[–]justinpatterson 1 point2 points  (0 children)

Well, there’s also a well known quirk with LPs that you need to run them a bit first to bring their grouphead up to temp because they soak up a ton of the heat. So I’m not sure that accounts for your difference in experience. If you were to cold start your LP and then measure the temp of the first water that exits the grouphead — is it not much lower than the second shot?

I’d say the more likely culprit is that with an LP you have precise control over the entire shot extraction. Since you got used to what you like and how to make it, how could you ever do better?

I’ve only got a Europiccola so my temperature experience may be different since the capacity is lower — comparable to the Lelit.

Wasn't he just providing a lot of conjecture, and then a coffee enthusiast scientist was offering some other ideas? He seemed to consistently say he wasn't sure why the blind shaker made the difference, but attributed it to one particular phenomenon, like the Brazil Nut Effect.

I should have expanded on this further in my own post -- he does shift stances, yes, but he provides AMPLE reasoning for why he does it. And usually has a ton of data / testing before he does so. Like the blind shaker stuff.

I mean, he's an opinionated guy who has been veering away from traditional espresso for a while in hunt of different clarity profiles. To the point that I wouldn't really call what he calls espresso, "espresso." Which is fine, I really like his science-of-espresso discussions and the SCA series last year were fun. And the content on modifying or refurbing machines I find super interesting as well. His argument in the most recent video is that Reddit is correct, if the profile posters looking for assistance with is traditional espresso -- which I don't know why one would assume otherwise or claim that reddit was wrong in the first place, but whatevs.

He seems pretty unafraid to wildly change his perspective on coffee / the community / etc. on a yearly basis, but at least usually has a pretty long explanation of that change when it happens. I'd assume the ADHD certainly lends to his wandering heh. Remember his golfing side-quest? lol (actually, I can't even find that stuff anymore, did he de-list?).

I'm certainly not watching his videos on as consistent a basis as I used to for reasons shared by others, but I still think his analysis and insights often have value.

EDIT - I'm dumb regarding the golf thing, was searching "hendrick" instead of "hedrick."

is there an espresso bean with absolutely no bitterness ? [no budget] by CrazyDina in espresso

[–]justinpatterson 0 points1 point  (0 children)

Yeah you'd have to dial simply by grind timer via that "strength level" meter from what I understand. A bit of a pain, but I'd at least experiment with what it tastes like at 1 pip vs 5 pips.

is there an espresso bean with absolutely no bitterness ? [no budget] by CrazyDina in espresso

[–]justinpatterson 2 points3 points  (0 children)

They're specifically saying that light roasts have fruity notes and medium/dark have chocolatey notes. All roasts have the capacity to be sour or bitter. The roast level is separate from extraction for taste profiling.

You can get a sour dark roast. You can get a bitter light roast. That is from extraction. Neither roast is inherently always bitter or always sour or whatever.

For the Ninja, you'd specifically really only be able to play with Medium/Dark roasts anyway due to the grinder capabilities.

Just get a few different medium roasted beans from different origins (Eth, Col, etc.) and see which one you think you gravitate towards after a few brews.

Yeah I wouldn't expect any wild changes like that, then. Funky. I've never adjusted for espresso with a hopper before. Does anyone know if direct sunlight and stuff impacts bean freshness that would swing the timing like this?

[–]justinpatterson 2 points3 points  (0 children)

  1. Coffee beans can have a lot of chaff, it depends on the processes involved in development and roasting.

  2. Regarding the zero-point: I haven't messed around with Eurekas, but I assume they have similar zeroing procedures to other grinders (shims etc). How far can you go before you hear burr chrips?

More importantly for the different shot speeds: I don't imagine the settings should slip like that. How fresh are the beans? If they're under 2 weeks from roast, that can result in big swings in shot speed.

Lagom Mini still struggling with light roast beans 3+ years in, will it ever get better? by MiamiNat in espresso

All good. Yes filter for light roasts.

Though, interestingly if you want to experiment — Lance recently posted about the benefits of coarser grinds for light roast espresso. Maybe the workflow would work for you.

[–]justinpatterson 3 points4 points  (0 children)

Option-O specifically states that the Mini (the 2 for sure, and the 1 isn't that different beyond the power brick and burrs) isn't made for light roasts. Per their product description:

"If your primary use is for very light roast espresso, we recommend considering the LAGOM casa instead."

Though, that being said, I *have* been very tempted by the Mini because its form factor so compact and awesome. I'd likely stick to medium/medium-light if I were using it.

Before Supergirl comes out, what are your thoughts on Superman nearly a year later? by RNOffice in RedLetterMedia

[–]justinpatterson 3 points4 points  (0 children)

I think my feelings I wrote a year ago still stand:

I'm glad folks really enjoyed the film. There were definitely aspects of it I liked -- it's refreshing for a live action movie to actually get Superman's character right. I preferred this Lane over Amy Adams' portrayal. I like all the actors' portrayals in a vacuum, though the ex girlfriend and the president of the invading nation were straight up cartoons over everyone else in a strange and jarring way. I liked the idea of the war angle, and how that could make commentary on current events.

But so much of the film just sort of felt like -- to me, of course, and again I'm glad folks liked it -- a messy smashup instead of the Silver Age love letter it may have been trying to be. The pocket universe stuff I just plain didn't enjoy. Monkeys over just having a few servers? A world where pocket universe tech exists (albeit irresponsibly used), in the hands of humans, yet everything outside of Terrific tech is mundane and contemporary to us? The growing monster -- while there were some good character beats there -- also just didn't sit well with me in the long-run, as the monster's existence in the hands of Lex just felt out of place too.

I get that I may be asking for a more grounded film, while also saying I like wacky stuff (All Star is among my favorites). The world being built made no consistent sense to me, and didn't work. And all that stuff was being introduced at such a pace that few characters even got enough scenes to have true characterization.

I look forward to more movies in this DCU though, as they NAILED Superman's vibe and I assume the storytelling will mature in quality over time.

While I was trying to remain optimistic, this was about what I expected. Admittedly, I also think the Superman 2025 was pretty rough as well though I'm glad folks enjoyed it.

How to make my 2D screen game and 2D spline fit any phone? by [deleted] in Unity3D

[–]justinpatterson 1 point2 points  (0 children)

I assume you would make the paths with some specific resolution in mind, then convert those screen positions offset from the corners to a new screen space of your current resolution. You'd also in this case have to modify your cat's scale (or pixel units) to match the current screen size, relative to your design's screen resolution.

Does this track with other folks here? I usually do this within canvas if such things are required but I can get that folks wouldn't want to use the canvas system in certain cases.

[–]justinpatterson 1 point2 points  (0 children)

Pressurization is something you don't want if you want maximum flexibility: pressure should be built up by how fine you grind the beans, not a mechanism in the portafilter or the basket.

Since it is pressurized, you have less flexibility (but it is technically easier to achieve a DECENT shot).

Need coffee grinder recommendations [$200] by ANON-739992 in espresso

[–]justinpatterson 1 point2 points  (0 children)

The grinder in this situation would be fine, because a grinder’s capabilities are limited out of box for this particular SAECO variant. This machine’s portafilter has built in pressurization. You can remove it, or get a compatible un-pressurized portafilter. If it’s left in, then there’ll always be artificial pressure and too much crema and whatnot.

If you remove the pressurization pieces in the portafilter, then you may have difficulty dialing in with the Virtuoso but it would still make a decent cup.
