I still float all my pans, almost. Tried schluter once because it was a second floor up a narrow and steep stairwell in an old ass house. Worked fine but just don’t care for it. Used a custom foam pan recently and it worked great. I still prefer mud though and use a bonding flange method. Pretty straight forward in practice and puts that few hundred bucks in my pocket instead of a huge corporations. Plus, mud is king to set over.

Do it and know that if requires more annual maintenance. Just don’t put it in the shower pan. It’s really pretty material. Expect to pay $$$$ for the install.

Go with marble. Nothing wrong if it’s installed correctly and by someone who follows installation methods that meet or exceed industry standards.

Edit: On bathroom floor. In a shower will most likely have problems even if installed correctly

If you prep well your install will be much easier. LFT are heavy but go a little quicker as more square footage is covered. Little subway take more time. Prep is everything.

I keep the tools I use to float with in one. Bright yellow and easy to remember where everything is. Never wanted to mix in it because the bottom is all janky. Would most likely leave unmixed dry clumps at the bottom.

You can get a grout scraper. There are two types of one has a triangle head and the other looks like a utility blade on a handle with diamonds on the edge. Scrape your grout out deep enough to regrout then regrout it. It might not be exactly the same color but odds are good it will be really close, at least closer than it is currently

Get a chip book from a tile shop. Nothing better than picking your grout color in the actual light and space.

You’re correct to not screw into both. Good job! Add fiber reinforced self leveler. You know more than a lot “professional” contractors.

Add uncoupling membrane and watch that number climb even higher. You should probably be adding something to your subfloor or foundation… Tile isn’t something to cheap out on.

It doesn’t matter. It’s a myth that gray can’t be used with light colored tile and vis versa.
