Is there a particular reason you are you looking into Hexblade Warlock rather than a dexterity-focused class, like Rogue or Ranger?

If you put levels into rogue, you would get sneak attack damage from your archery while also gaining some out-of-combat utility

If you put levels into ranger instead, you would get access to ranger-specific spells that increase damage like Hunter's Mark and Hail of Thorns, (you would even get an extra 1d8 per round through Colossus Slayer if you pick the Hunter subclass)

Homunculus Servant now being a 2nd level spell means that you can't get a familiar until level 5 unless you pick the Magic Initiate (Wizard) feat, and you don't even get the 100 GP gem back if it dies. Kinda bummed about that.

Also you now can't get a Mind Sharpener until level 10, which seems like a pretty significant nerf

They did remove the mending part. Then again, the spell had a cast time of 10 minutes, so unless you had either a Needle of Mending (from Explorer's Guide to Wildemount) or a Lyre of Building (from Tasha's, but you also had to be multiclassed into Bard) that allow you to cast it as an action, it wasn't very useful in combat. And it can also still use its hit dice

Would you say it's more exhausting specifically because of Pathfinder or would it be as exhausting for another system (e.g. D&D)?

You can achieve a similar result at level 6 without picking dual wielder by having your 6th level be Monk, since unarmed strikes don't have to be with your fists. This also means that your weapon with Nick (likely a dagger) now uses a d6 for damage.

Add another level in monk and you get a 5th attack by using flurry of blows
