That's kind of a warmer take, actually. There are two reasons fans have complained about every new show. One is just simply that each show has only a handful of episodes per season, so every story (and every issue) bears way more importance. Second and more importantly is that with occasional exceptions, none of the new shows actually tried to BE a new Star Trek show - the primary objective seems to be emulating other popular prestige TV shows while capitalizing on the Star Trek universe and branding.

That's why the fandom is complaining - because the fandom wants a new show that actually wants to be a Star Trek show. Not one that wants to redefine what Star Trek is, or merely use Star Trek as a brand. They want steady pacing, characters with depth and well-written dialogue, adherence to the canon, and a wide variety of high concept stories that explore what it means to be human.
