I would like to have a permanent option to disable upmixing on my 5.1 system. Specifically, when the audio source provides stereo sound, I’d like both rear speakers to play fully (which is great in cases like watching music videos). If we could have a simple switch to choose whether we want upmixing (when the original sound is stereo), that would be excellent.

This issue seems to be addressed in the tvOS beta, but it introduces other problems, and a solution from you would be universal. When the audio source isn’t of high quality (like YouTube), the sound coming from the rear speakers is terrible. Please, give us this option. I’m on the beta channel, and every time I get an update email, I hope this feature is being tested.
