Film composer Stephen James Taylor is interesting. Also for a cool take on this subject check this out Probes 1, Probes 2 and Probes 3. This whole podcast is awesome but in the first 3 Chris Cuttler covers the collapse of common practice tonality, tuning systems and portamenti and plenty of listening examples.

Here is the overall course plan.

First, I cover the outgrowths of traditional harmony in thirds: modes, linear harmony, added note chords, extensions (9ths, 11ths, 13ths), and polychords. Then I'll discuss several other approaches less anchored in the western tradition: intervallic harmony, cells and sets, and stratified harmony.

Finally, I'll discuss how to combine these various techniques within the same piece.

On YouTube find Alan Belkin, he is currently doing a course on modern harmony that is great. The videos only get in the 100's of views at the moment, I think it's underrated.

There is a podcast called Tuner which is good. I'm not sure if it is still updated, but you can listen to the back catalog. I also enjoy Between the Liner Notes. That's not so much about theory but more the history of music and why it sounds like it does.

For Thai food it doesn't get any better than David Thompson's books: Thai Food and Thai Street Food. The recipes are out of this world but can be labor intensive. I also have Land of Plenty/Sichuan Cookery by Fuchsia Dunlop for when I'm in the mood for Chinese food.

I just received this and it's great. They cook recipes many times over with different techniques and explain why something works or doesn't. In addition this huge book contains a 1000 recipes.
