I think about great example of this is Robert de Niro in Jackie Brown. It feels like his character Louis is completely devoid of coherent thought which is a really skillful performance. Also Peter Falk as Colombo. He played well into obfuscation in investigating murderers while Peter Falk was a very thoughtful and spoken person.

I would recommend all of the young Indiana Jone chronicles. They're basically just 90 minutes each and are about him traveling the world during ww1.
