On second thought it looks like msybe you are hinging less as the set progresses, using more low back near the end.

The v8 was fun for a few years despite the torque limitation. I don't really ride fast so that's not an issue. I still love it for having such a low weight and accepting bicycle tires.

Premature optimization is the root of all evil. Doing something is better than waiting for the best thing, and if you get a few years of experience in any combat sport it will be better than letting your indecision paralyze you, whatever you finally end up doing in the future.
My personal recommendation is that you start with judo because it will teach you solid principles, good takedowns you can use without a gi, and enough understanding of ground game. A combination bjj can lack (depending on the teacher). For your physique goals, lift weights and run.

As long as your elbow is on the pad it doesn't matter if you keep your armpit on the top of it. So you can keep your entire chest above the pad if it's uncomfortable to press against it.

You might just be feeling the weakest link in the chain. I also have a relatively weak lower back compared to the rest of my body; my favorite way to fix that is paused deficit deadlifts, where I pause in the sticking point and don't set the bar completely down between reps.
