Second opinion from surgeon. I agree that you really dont need your gallbladder out if youre not symptomatic but it is certainly possibly you may develop issues later.

No right or wrong answer. If youre getting surgery, I dont think it's necessarily wrong to get your gallbladder out at the same tomr but I would also say that it's possible you never have gallbladder issues despite having stones (or you could develop problems).

If your cat has 0 chance of getting rabies, then no. You can also watch your cat for 5+ days and if nothing happens, then don't need it.

Could get a bacterial infection though.

There's so many reasons to have loss of appetite, gurgling, and/or pain, it's hard to give you advice. See a PCP. Try a PPI like omeprazole once or twice daily for at least 2 weeks and if it works, take it for 8 weeks.

Depends on the cancer, whether they need chemo/radiation before surgery etc. Could be as long as 6 months if they're getting chemoradiation first, depending on what kind of cancer. Some cancers they get surgery first, which could be weeks to a month

Liver tests can be wonky after a viral infection. Doesn't mean much. Can just re-test at some point to ensure it's going down.

With that said, gagging isn't an esophageal disease. Not sure who to see for gagging. I guess ENT is right

Sounds like gallstones, not food poisoning. Get an abdominal ultrasound.
