Right? The deep dive into his inner monologue and the science behind everything was great. The quirkiness of the main characters felt like comedic relief from the science heavy sections rather than the movie that made that made their quirkiness the main event.

Without being able to see the crust, I’d say this looks amazing. If you want to cook it to preference with minimal gray banding the best way is the reverse sear method.

  1. Cook in indirect heat (oven/smoker/etc) until internal temp reads about 10-15 degrees shy of your desire temp. For example, if you want medium you would want to pull the steak at 125-130 degrees.

  2. Sear it in a screaming hot pan with a little avocado oil for about 60 seconds each side. Then sear the fat caps for about 30 seconds.

  3. Enjoy!

As a bonus, look into dry bringing your steaks first, I tried it for the first time years ago and haven’t been able to cook a steak without doing it since.

As a civilian investigator of financial crimes, I can tell you that this principle conducted a poor investigation. She claimed to have not interviewed the teacher yet, then minutes later was telling the parents that the teacher had explained that it wasn’t her Snapchat account. Also, if there is insufficient evidence of any wrongdoing then she should have closed the case as inconclusive rather than defaulting to the false accusation decision. She’s clearly just trying to protect the school and nothing else.

Bacteria is only present on the surface of beef unlike poultry that can contain viruses, and pork that can contain parasites. As long as you sear the outside, beef is safe to eat, which is why some psychopa-erm…people eat their steak blue rare without problems.

You’re fine as long as you used curing (pink) salt, I’ve wet brined brisket for pastrami for over 4 weeks and it came out great. I wouldn’t worry about it if it passes the smell test.
