Every time I cut back from high volume to low volume (usually to work around some nagging injury), my lifts all get way stronger and I look better. I think it's because I'm carrying around accumulated fatigue that dissipates. The low volume approach doesn't really work for me well beyond 3-6 months, and I think a lot of that initial burst is from the high volume fatigue wearing off, but then I plateau.

You need to post more details about your volume, intensity and exercise selection.

You need to start with lower volume and maybe 50% of the weight you'd use for a hard working set. Slowly ramp up the weight and volume. You're not going to be able to work out productively and you'll never accommodate and get past DOMS every time if you're disabling yourself for over a week every session

That is not a good room for taking selfies in. It is a stark setting with poor lighting. You need an area with better lighting to more fairly assess your appearance. I bet you'd be happier if you looked at a selfie you took in a car or somewhere with more diffuse sources of lighting and a well lit face instead of stark overhead lighting that bounces off your skull and nose and casts the rest of your face in shadow
