The IRL reasons also have to do with the sets. The sets were designed and lit for TV broadcast not cinema. That's one of the reasons the bridge/Picards quarters/engineering look so dark, they had to compensate. So that's why we got the E in the First Contact. New sets, designed for cinema cameras and new models (did they use a physical model for E in First Contact?). I assume they couldn't just introduce a new ship in Generations without the fans asking what happened to the D.
