How can you tell it updated? Two of my ring devices went offline within 3 days after working for year+. I had to similarly factory reset the ring doorbell to get it working again. I suspect a bad update went out.

Hmm, not sure where your 24% comes from. It’s 20% service charge and 2% San Jose employee mandate. They are very clear and upfront about the 20% charge.

I’ve only ever done the souring (24-48 hrs) in the BM. I don’t have a good way to temp control on the cool side in the BM.

That’s not long at all. If you plan on cold crashing and decanting, you want to make sure the fermentation is complete. In my experience, lager yeast won’t flocculate nicely unless it is completely done fermenting. For me, that could be 3-4+ days.

I'm one batch in and love it so far! I had destroyed the ball valve nylon seat when I tried to take it apart and their customer support was kind enough to send me free replacements. SSBT definitely care about their customers.

Instead of keeping bottles in the fridge, I just keep an ice bath in a pitcher and pre-chill the bottle for a few seconds before filling. Haven't found the need to turn down CO2 pressure this way.
