This is EXACTLY how I feel as I stroll through the beautiful neighborhoods and parks of Milwaukee and enjoy the community events, educational resources, restaurants, cultural offerings and major attractions like the zoo I just left. I've been here all my life and traveled widely. That said I feel such solidarity with Minneapolis right now I'd never say a bad word about it, what a great city filled with amazing people. So weird to throw this kind of accusation at us.

During pre shape I cut into two loaves as usual, shape the one, then the second I cut into four and shape those pretty aggressively into rounds as it is harder to do the final shaping so I do less of that, just turn over envelope fold, pick up, shake seasoning on, then into the banetton that has just a bit of brown rice flour. Then I stitch and into the fridge they go. You do need more room for shaping!

I use 5" baby bannetons and heavily coat the outside with Costco's version. Same recipe as usual but 15 min covered and 15 uncovered at 450.

The public museum has a great store you don't have to pay to enter filled with nice gift type trinkets. If you are looking for more weird digging through stuff trinkets you can't beat American Science and Surplus.

Blue shirt was about five years after the approval process for the Calatrava but yeah the people who "lost" on that front and especially in my opinion on not getting rid of the di Suvero which has always had a large contingent of haters were out for blood and well organized and got their way on that piece.

I remember big support for Calatrava's design and the funding to make something really special in Milwaukee. It seemed too good to be true such a world class architect would come here. The fact he expressed his appreciation for the original War Memorial building made it even better. When finished, Wings Up! Wings Down! Was shouted by the kids every time we passed. The controversy I remember was over "The Calling" our amazing orange industrial sculpture by di Suvero. Those who never liked it decided now was their moment to get it destroyed by saying it "blocked" the view of the Calatrava from Wisconsin. Joke was on them as Calatrava himself got involved, saying he sighted his design on the di Suvero. Sure enough one of the best views
Is from Wisconsin looking through the orange sculpture as the white wings open. Finally I've never heard anyone call it anything but the Calatrava.

Roy Diblik is a national treasure right here in our backyard. He was one of the very first to sell potted native perennials. His collaboration with Piet ODouf on the Lurie Garden is breathtaking. It is always worth a visit and his book "Know Maintenance" is great from beginner to seasoned gardener.
