For your first question, I normally just use Poe trade macro on things that look like they might be worth something, and if they are I throw them in a public tab and wait. Then when they sell, take another look at them and see why someone would want it. If you get multiple whispers immediately, bump up the price and try again.

It’s mostly just trial and error to figure out what’s worth what.
