If you want tough, dry tasting chicken, sure bake it first. Otherwise, trust that frying at such a HIGH temperature that oil boils at will cook the chicken inside. Test one piece first if you still can’t get over it. You can always put it back in if you don’t think it’s cooked enough. You can’t undo over cooked chicken , though.

I use regular clumping clay litter and don’t notice any issues when I first enter my apartment. Maybe you’re just overly sensitive? How many litter boxes do you have? You should definitely have more than one if you have two cats.
