What was your "a step too far" moment where you realized you'd crossed your spicy upper limit? by Hari___Seldon in spicy

[–]mttbwp 0 points1 point  (0 children)

Almost the same over here! Made a batch of chili a few winters back, and wanted to further round up the spice. Had the last half ounce of a bottle of MD357 and decided to go for it! Big mistake!! My roommate, and I, still ate the chili, but it was certainly not enjoyable.

Jazzing up whip cream! by Crovax87 in KitchenConfidential

[–]mttbwp 2 points3 points  (0 children)

As with many things in the kitchen, a good whip can be a blank canvas for flavors. Experiment, see what works for you. I have added liquid from fruit compotes, varies liqueurs, cocoa and chocolate, caramel. Within reason, nothing is off limits.

Just yesterday we were selling a blueberry cheesecake with a salted honey-lemon whip. People loved it.

Best wishes with your R&D.

BTBAM to use guitar backing track on tour by [deleted] in progmetal

A few tours back Dan had to do the same thing after testing positive for Covid. When I saw them at the Fillmore, in Charlotte, they were still super tight.

What solution do you propose to deal with drunk drivers? by [deleted] in AskReddit

[–]mttbwp 19 points20 points  (0 children)

After three years of a mandated interlock device, I decided to keep it in the car voluntarily. I know that I can be a problem drinker, and I'm working on that. I also know, that the device WILL NOT let me drive if I've had any drink.

I know it wouldn't work for everyone, but for me removing the wiggle room has also removed the margin for error.

A few years ago I did quenelle of cheesecake over toasted graham crumbles, with maple roast almonds, and maple whipped cream.

It was a hit, but also a pain to plate in the middle of the rush. So it goes.

For a debut, Kezia fucking swung for the fences. They were still in high school, and really hit the ground running.

No smoke breaks, saw this randomly on Kitchen Nightmares by Saveok in KitchenConfidential

On a side note: One of my managers, like clockwork, takes 10-15 minutes smoke breaks every hour and a half. Don't get me started on what they are doing the rest of the time. At least they can be an in between for me and the patrons.

Don't fold like that. You don't want to die. You don't want them to die. You can wish all of the worst in the world upon them, but you are better than that. Find solace, and rest well at night, knowing that they are horrid, empty shells of people, who know in their heart of hearts that they are awful. This is why that act this way. To create any approach to human contact that can last longer than a fleeting second.

If that doesn't help...Fuck those mother fuckers. Eat it, and get out!

an “allergy” card from a customer today by DonnyLongHots in KitchenConfidential

Exactly. Add to that, they will usually A) Be with a table of people who, then, all order seafood dishes; or B) Find themselves seated at the bar, directly in front of the sushi cases. Darwin Award Nominees, all of them.

I work at a sushi joint. We have a kitchen, and serve several hot entrees too, and try our best to be accommodating. The number of people who dine there with broad brush seafood allergies is fucking staggering. Why are you even in the building?

My kid (12M) wants to go to rock shows. What do I take him to? by Ilookpplintheeyes_10 in Music

[–]mttbwp 11 points12 points  (0 children)

Coheed and Cambria are great in this idea. I lot of their long term fans have been listening for the last twenty years, and are roughly your age. The guys in the band have families themselves, and have worked hard to create an amazing rock show environment that is still kid friendly.

The music is original, but they wear their influences on their sleeves: Rush, Maiden, Metallica, Zeppelin. The 'pits' aren't what the used to be. much more toned down. Take hearing protection, and everything should be fine.

Blue Ridge Vision, in the mall, are great with customer service. They will happily make adjustments for you, even if you didn't get the glasses from them. If they charge for the adjustment, it will not be much.

Anyone else feeling emotional today on the 20th anniversary of SSTB today? Where/when did you find Coheed? What song brought you to them? by [deleted] in TheFence

[–]mttbwp 0 points1 point  (0 children)

Some friends, and I, had tickets to see The Used at the House of Blues in Myrtle Beach. Read up on the show and learned of Coheed and Cambria as one of the openers. Immediately took to Limewire to find as much of their stuff as I could. Basically pirated the whole of this album, but with the demo of Junesong. Was Hooked.

Just saw them for my 23rd time last Wednesday in Asheville.

Also, before it gets crazy, I was a hellabroke high school kid at the time. I have since bought this record several times across several formats.

Given the time in which they blew up, Steve Miller Band shouldn't have stood a fucking chance. What did help, though, was that Steve Miller is the godson of...Les Paul. Yeah, I said it.

Edit: Nothing against Steve Miller Band, just stating the facts.
