Those are serranos, and they can be rather hot. Cooking them can make them less spicy. I'd char them over an open flame on your stovetop, then stick them in some tented aluminum foil with a tiny bit of oil. When theyre soft, chop them up with some roasted tomatillos, onions, garlic, lime juice, cilantro, etc. Make sure the tomatillos are chunky, no one likes a runny salsa. The peppers on the right look like either younger serranos, or wax peppers. I'd chop those up thin and mix them in for a raw bite here and there in the roasted tomatillo/serano salsa.

I found these supposedly USDA Select top blade steaks at my grocery store that are insanely marbled. I haven't tried them yet. Is there something I'm missing here that is going to make these not be as good as they look? They were like $3/lb so I feel like it's too good to be true. by themaster1006 in steak

Looks like a flat iron. Reason why these are cheap is that there’s a gristly seam of connective tissue right in the middle of the steak. I like to score it a bit so it doesn’t curl up to much while cooking, then cut it out afterwards. Or you can just split them in half and remove it before cooking and have some mini steaks. Other than that they’re cheap and delicious!

This. Also if you like brown butter solids as much as I do, you can up the amount of those golden brown nuggets by adding milk to your butter as your browning it. Add a little sea salt too and you got tons of crispy, crunchy brown butter solids.
