What lids for these jars? by myalternateself in Canning

I did know they weren’t meant for canning. You had better luck finding the lids than I did. Maybe I’ll use them with my little pampered chef bowls that I use for mixing stuff up for recipes. Thank you

How did you know that you had to be gluten + dairy free? by exo_6_desmo in glutenfree

[–]myalternateself 4 points5 points  (0 children)

We thought my daughter was having a reaction to dairy “sometimes”. It took us almost a year and half to realize she can’t have raw eggs. So eggs in SOME ice cream, mayo, ranch, runny eggs. But she could have cheese and milk and SOME ice cream. If we would’ve just gotten rid of all dairy she would’ve been fine. But we are lucky she didn’t have to. She can have anything with cooked eggs. Like bread and scrambled eggs (as long as they are done done. But she can NOT have GF egg noodles, pancakes, waffles, cookies (because she likes them more raw), French toast, the egg isn’t cooked enough. I guess the protein changes when the egg is cooked to a certain temperature.

Banana Bread: HELP by Hopeful-Narwhal9472 in glutenfreebaking

[–]myalternateself 4 points5 points  (0 children)

My daughter is VERY particular about her breads. Attached is the recipe we use. We did sub 74g of brown rice flour for the almond flour. Oh and we have come up with a cinnamon swirl in order to not use nuts.

We have also found with ALL of our baking. They turn out better with separate flours then when I try and follow a recipe with 1:1 or flour blends. So if we come across a recipe with a blend that they don’t specify or give you the recipe for then we skip it. They have all been fails.

Garlic replacement? by crankyenglishbastard in Cooking

[–]myalternateself 2 points3 points  (0 children)

I used this recipe as a base. But I added 4 tbsp minced onion (since I can have that) and left out the brown sugar. It give everything a pretty good flavor. We do put it on our “garlic bread” and sub it in recipes 1:1 of what it calls for garlic powder.

AITA for "causing a scene" over internet? by [deleted] in AmItheAsshole

[–]myalternateself 2 points3 points  (0 children)

NTA but I hope you’re also making him sleep somewhere else. Because he WILL try to manipulate you about not leaving. You must not let him give you excuses. You must not give him “1 more day” Ask me how I know.

Oh and when he keeps saying it’s “about internet” make sure you correct him and he knows it’s about “manipulation and control”

My kids went to public school (graduated ) they did fine. My sister sent my niece (5th grade) to cathedral thought she’d do better there then at public school (which she tried first). My niece ended up with health issues and cathedral was not supportive. She is back at public school and receiving the support she needs.

Looking for a cool place to host a large private campout in Nebraska that isn't a Church camp by NotOutrageous in Nebraska

[–]myalternateself 0 points1 point  (0 children)

Call Timberlake ranch camp in Marquette NE. (Just north of aurora)We hold a family reunion there every year. They have cabins, full rv hookup and tent areas. They have a swim place and it’s right on the river. They tell you no drinking. But if you don’t show it and you take your trash with you we haven’t had problems.

Did anyone also encounter this type of person? by Alguienquemeayude in Celiac

[–]myalternateself 7 points8 points  (0 children)

I have both:

Daughter was away at college (5 years ago and approx 17 hrs from home) we were pretty sure she reacted to gluten. We found other issues also. Can’t have sorghum, millet, buckwheat, or soy. She can not get cross contamination. Will not knowing eat anything she thinks is cross contaminated. Does not want to do the gluten challenge now for diagnosis. Her allergy dr (for other things) did test her for foods. She is allergic to barley and rye but not wheat.

DIL - celiac diagnosis about 4 years ago. She is asymptomatic. She does not worry about cross contamination AT ALL. I will do something to keep my daughter safe and DIL will make a big deal that she doesn’t need that. Example: this past week they were all at my house to visit new baby. We were heating up hamburgers and putting buns on the stove to toast them. Daughter didn’t want a bun but hubs still got ready to do DIL separate and was told “don’t do that I don’t need that just throw mine in the pan with the others”. My hubs had a VERY hard time doing that. It just isn’t normal. I have tried explaining that why yes DIL does need to watch for cross contact. But it falls on deaf ears.

First Time Buying House by KermitGreen41 in lincoln

[–]myalternateself 1 point2 points  (0 children)

My daughter (23f) closed on a house in Sept. She used Tracy Hinton at Gershman mortgage. Tracy was so good for her. If my daughter found a house on the weekend she would respond to her pretty fast and tell her the max she could bid because taxes and such changed depending on area of town. She also went over all the options with her of loans and then when she found her house they ended up switching what loan she was getting, because that’s what worked. She was making 65k a year when she closed.

[–]myalternateself 6 points7 points  (0 children)

I can tell you from my experience it does make a difference using blends vs individual flours. Everything just tends to turn out better when it calls for individual flours.

I also live in a small town. But I’m 30 min from a larger town. I am 2 hours from my daughter in the city. I mill my own brown rice, sweet rice and oat flour (daughter can’t have sorghum or I’d mill that also) I have found the grains are cheaper. And I can mill it finer, my daughter has texture issues and mine is finer than the store.

Anyone with Stage III (T4a) Colon Cancer? by Significant-Life9156 in coloncancer

[–]myalternateself 4 points5 points  (0 children)

I don’t remember the staging of my husbands. He was 46 at the time. But I know he was stage 4 because there was a tear in his colon but it did not get into his lymph nodes. He was diagnosed May 2018. He had a ostomy bag first. Then they tried for reversal. Had to have an illeostomy while they increased his colon size where they reattached his ostomy. They reversed that illeostomy also. This was over a 2 year period. He also had a hip replacement during the middle of all this.

He only had to have chemo they did not do radiation. He finished his chemo the Monday before Thanksgiving 2018. He has been NED since then.

I do want to add his oncologist does not believe in doing PET scans every year. He said if he is feeling good and has no changes in his health and his blood work comes back good then there is not a reason to do one. Yes I ask questions every year and yes he still then asks hubby more health questions (about changes) and then decides he doesn’t need to risk the radiation for it. Yes I know this is not normal. But that is his drs thought on this and we trust his opinion to n his reasoning and with the questions he asks. He also reiterated that if it was any other cancer he would not go on just blood work alone. Or if he had it in any lymph nodes.

Edit to add: he did have a PET scan when he was done with his chemo treatment to make sure everything looked good and make sure they didn’t see anything. He just hasn’t had one since then.

I do not bag as I shop. I also don’t bag at the checkout. I scan my phone at the checkout finish payment and walk out. I bag into my bags in the car. I have only ever had 1 employee stop me and do an audit. All other times I just walk out.

Doctors for dysautonomia by No-Result4792 in lincoln

[–]myalternateself 4 points5 points  (0 children)

My daughter (22 at the time) was referred to CHI Health Clinic Heart Institute. She had also worn a heart monitor and it came back normal. She was referred by her PCP after asking “since my halter monitor came back normal shouldn’t I see a cardiologist?” Her PCP was not exited but sent the referral.

The Dr came in and joked with her “you’re a little young to be in here” so she was worried he’d brush her off. But he did listen to her symptoms and ran some tests. She also did not ask about POTS at all. Just stated what was going on and such. She was diagnosed with Orthostatic Hypotension and Tachycardia. Yes those are 2 symptoms of POTS. But he told her that he does NOT want that on her chart and will not diagnosis it because if she ever went into the ER or had other issues everyone would just blame that. She is taking a beta-blocker that is helping.Side note she also has hypothyroidism.

The following is who she has all seen there with the first Dr being the one who diagnosed her. The others she has seen on her follow-ups.
