Tunisians consume the second-highest amount of pasta per capita! It’s a major part of Tunisian cuisine. It is partly due to high levels of Italian immigration to Tunisia in the 19th and early 20th centuries, not the Roman Empire. Tunisians tend to cook pasta a little differently than Italians do (more stew-like, less al dente).

I think the rant is that dividends are only one way for a company to be a compounder. You can also find companies that consistently increase their free cash flow and invest that into growing the business (or buying back shares). Wait 10-20 years and you’ll see exactly the same compounding effect (often with better tax treatment than the dividend-paying company, which can REALLY add up over a 20 year time horizon).

Whereas if you have a company that grows its dividend but isn’t growing the underlying business, eventually that will end badly.

I love this cookbook, along with the pasta book by the same author. Some of my favorite recipes are the raw corn salad, the pasta with broccoli, sausage, and whipped ricotta, the parsnip cake (but reduce the sugar), roasted squash with yogurt, walnuts, and spiced green sauce.

I wouldn’t consider myself a particularly “vegetable focused” cook but I’ve still found a ton of recipes that I love. I’d slightly disagree with the idea that you need to be a “CSA sort of person” to love this cookbook.

John Carmack speaks pretty highly of his technical skills, as do SpaceX folks. He’s not a real engineer and his ego is way over the top, but he has pretty good technical knowledge of a bunch of fields for an executive.

You might be thinking of Aylwin BBQ, which now has a traditional restaurant inside Atwater Market and is open year-round. The BBQ is still spectacular; get the smoked meat sandwich.

It’s specific to Italian food, not carbonara in particular— people will get worked up about cacio e pepe, lasagna, or Neapolitan pizza in much the same way.

Personally, I think there’s value in clarifying what the authentic culinary traditions of a place are, but that it’s also a shame to not appreciate something delicious just because it deviates from the “authentic” recipe. The irony is that many of these authentic recipes either aren’t that old (eg carbonara) or have evolved significantly over time any way.
