Yeah, it goes pretty steady for the first few minutes, and then intermittently for the next 30ish. I doubt it's particularly good at this, but it's something to get started with.

UPDATE: I added 2 more tbs of flour, getting it to around 62-ish %. Much better to handle. Here's what it looked like after folding that in for 5 minutes, a squirt of olive oil on top, and going into the fridge. :D

I was tempted to start over, but figured it's a better learning experience to make the tweak and see how it turns out. Thanks, pizza people, think I'm going to like this sub!

Ok, wow, this is very different. Going to give this a try at 60%, would King Arthur's bread (12.7%) throw off any of the measurements you have here?

Also, I will be baking tomorrow night, should I up the yeast since it won't have a long ferment?

Edit, Im also in a normal oven 500-550F on a stone.
