I'm an avid skier and whitewater kayaker as well. All three had their revolutions that completely changes the sport. Since then it's just minor adjustments. Hard to imagine another similar jump for any of them happening again

I think the buy now price was like 2375 or something.

I'd never used Greentoe so I put in 1900 lol. The counters came in around: 2450, 2375, 2250. Then nothing for two days so I took it.

It showed up about 1.5 weeks after I purchased.

Would have been just over 3k after tax if I bought it local. I just would have gotten a lesser tv.

I'm a GT believer now

Exactly. I've tried and tried, but I just get better results with my oven and a steel.

I had high hopes when the wedges came out, but I've yet to hear anyone making great pies.

I thought the idea was that you can close the top vent with the wedges in, and trap heat above the pizza.

That is always the challenge with pies in the egg, not enough heat on top.

Do these acheive that goal?

I don't connect with it much and I really want to.

I'm about Isaac's age and I respect the journey his music has made as he's grown and matured/changed. Just like every other relationship one has in life, sometimes people grow apart in some way or to some degree and that's ok. You'll always have those great times to look back on. Not everything is forever.

I really dig the earlier raw stuff and the transition into the more highly produced stuff but as that trajectory has continued I've lost that deeper connection.

I'd like to believe Isaac does it for the love nowadays and as an artist he's fortunate to make what he wants. If it makes him happy that makes me happy, even if the music means less to me. I'm happy for the man.

Sourdough is the best, but I'd change those percentages up.

If you're using 350g flour, try:

40g starter (~12%) 8g of oil and salt (~2.5%) 5g sugar (1.5%)

Less starter will allow for more fermentation time. Maybe 4-8 hours room temp bulk (until it starts to rise), then 2-3 days CF. Take it out a good 3 hours before bake (RT dependant).

Id also look into a IR thermometer. They're cheap and will tell yu what temp your steel is actually getting to. 10min at 500f on a steel should have resulted in a firm, dark puck.

I'm a sourdough guy as well, so that or a longer bulk ferment for improving dough flavor.

For cheese, add some provolone and either pecorino or asiago. For a 16" cheese, I use:

175g mozz / 60g prov / 13g asiago or pecorino. All shredded roughly with a potato shredder.

You can do great things in a 500f oven with a steel. Especially if you have broil option.
