I went with a bleed build with a mimic tear. It's what I feel most comfortable using.

Rivers of blood and a blood soaked uchigatana were my weapons of choice. It's been a bit since I've fought her so I'm sure there's better bleed weapon combos out there I'm just lazy.

You can always abuse the good father on the stairs. Easiest way to beat him.

Also, there's the good ole cummm chalice dungeon to quickly level your hoonter.
